ENCHILADAS ROJAS DE POLLO / RED CHICKEN ENCHILADAS

This Enchiladas are delicious and super easy to make. I made them and they wound up being super tasty. I make my own Tortillas, helped by my Tortilla press yes I love homemade Tortillitas, so they have a few little black flecks on them… their flavour is other, mmhh!  if you can make your own Tortillas, don’t be shy and give it a try.
I have to confess I didn’t have the Mexican cream, well, although the point of my blog is also give you tips or the confidence to use also ingredients that we can actually find easy in our local shops, so what I used was double cream, the consistence or body is very different although also have to say… was really tasty!! Watch the process and bellow are the ingredients and instructions to make this easy, tasty Enchiladas.

 

Enchiladas Rojas de Pollo RED CHICKEN ENCHILADAS

Ingredients
  • CHILIS: 6 Guajillo (dried chili)
  • 2 Dried Chipotle chilies
  • CHICKEN: 1 Breast
  • 1 cup Chicken stock or water from cooked chiles
  • ¼ Onion,
  • 2 Garlic cloves,
  • ¼ tsp Oregano
  • 1 cup Chicken stock or water from cooked chilies
Directions
  • Step 1 HOW TO MAKE THE SALSA
  • Step 2 Clean the chilies from the seeds and veins
  • Step 3 Boil them until soft
  • Step 4 Let them cool
  • Step 5 Blend the chilies together with the garlic cloves, onion and Oregano
  • Step 6 Adding half of the cup of chicken broth (or water where the chilies boiled)
  • Step 7 Pour the Salsa in a hot pan with a little bit of Vegetable Oil
  • Step 8 Use the other half of Chicken broth to pour in the blender and clean the rest of the salsa, then add to the pan too.
  • Step 9 Once the salsa boiled and is cooked remove from the heat
  • Step 10  
  • Step 11 HOW TO MAKE THE ENCHILADAS
  • Step 12 Lightly and only for seconds fry the Tortilla in a pan with hot oil- optional
  • Step 13 One at a time, dip the tortillas into the sauce
  • Step 14 Sprinkle some chicken down the middle
  • Step 15 Roll it up tightly, then place it, seam side down.
  • Step 16 Repeat with the rest of the tortillas. 
  • Step 17 And put it seam-side down on a dish
  • Step 18 Pour on the rest of the enchilada sauce
  • Step 19 Scoop cream over once all the enchiladas are assembled
  • Step 20 Add some onion rings
  • Step 21  the quantity you like
  • Step 22 Then sparkle crumbled cheese, also as much as you wish
  • Step 23  
  • Step 24 PREPARE:
  • Step 25 Shredded chicken,
  • Step 26 Onion cut in rings
  • Step 27 Crumbled queso fresco or añejo cheese. (If you don’t get the Mexican cheese, cottage cheese will work)
  • Step 28  
  • Step 29 HOW TO SERVE:
  • Step 30 Mexican crema (double cream works good)
  • Step 31 Onion rings
  • Step 32 Cottage cheese.(in case you don’t get the Mexican cream)
  • Step 33 And… Yum! enjoy! Buen Provecho!
