I just love and love Mexican gastronomy!! … this cake made with corn is absolutely from other world! just delicious! I can say is representative of the Mexican gastronomy as Corn as many of you may know is base for the Mexican cuisine. Today I bring you a Traditional recipe that is not difficult at all but full of flavours and even texture. There are many ways to present it, you can serve in many ways, some people like to serve with fresh cream with vanilla, some like me, with rompope or advocaat, and I topped with vanilla ice cream…  yoummy!! all this combination of flavours is just divine, you can taste each flavour they don’t loose their individuality. *The quantity of serves depends on the size of the slide. If you want more or bigger slices add the double or more of your servings.

PASTEL DE ELOTE CON ROMPOPE/ CORN CAKE WITH ADVOCAAT

Ingredients
  • 250 gr Corn grains
  • 3 p Eggs
  • 80 gr Butter
  • 100 gr Condensed Milk
  • 1 tbsp Baking Powder
  • 1 1/2 tbsp Sugar
  • 1 pinch Salt
  • 150 gr All porpuse Flour
  • 1/2 tbsp Ground Cinammon
  • 200 ml Advocaat When Serving
Directions
  • Step 1 1.  ​Blend the Condense milk with the Sweet Corn for 30 seconds
  • Step 2 ​2.​ Mix all the dry ingredients passing through the colander and reserve
  • Step 3 ​3.​ Whisk the butter making it a cream
  • Step 4 4. Add also one tbs of sugar
  • Step 5 5. Pour one per one, the eggs  
  • Step 6 ​6.​ Add the mix of sweetcorn and condense milk until is well integrated in the mix
  • Step 7 ​5.​ Then spoon by spoon add the dry ingredients that you mixed previously, again until is all well integrated
  • Step 8 ​6.​ Take to the oven to 180ºC for 1 hour in a carbon steel mould previously coated with butter and flour .
  • Step 9 ​7.​ When ready, place in a tray until cool.

IDEA TO SERVE: This cake honestly on it’s own is very tasty! still for a extra special experience  you can serve it with Advocaat and top it with some ice cream, or use fresh cream, toast almond to sprinkle on top.
